Ruby Bridges back to school meal tips

Hi my name is Ruby W. Bridges. I have been married to a truck driver for 17 years and we have seven children ( ages 21, 20, 17, 16, 13, 9, and 7).  I am very passionate about the needs of my children and children in my community which leaves me to lead a BUSY life.  When I become overwhelmed, reading, journaling, and dancing adds balance to my life and brings me silence in the storm. We have many favorite meals in our home. Ranch & Parmesan Chicken Rotini is one of them. We love meal time because we get to talk, laugh, and spend time with each other. 

 

Ranch & Parmesan Chicken Rotini

Servings: 8    Prep Time: 10 minutes   Cook Time: 10 minutes

Ingredients

 

  • 2 large chicken breasts, cubed

  • 1 Tbsp canola oil

  • Garlic powder, to taste

  • Salt and pepper, to taste

  • ¾ cup water

  • 2 bags of vegetables(preferably carrots broccoli)

  • 1 bag of frozen sweet corn

  • 1 lb. rotini

  • 2 cups heavy cream

  • 1 packet Ranch seasoning

Directions

  1. Cook rotini, according to package directions, until al dente.

  2. In large skillet, heat oil over medium-high heat. Season chicken with garlic powder, salt, and pepper. Saute chicken until browned on all sides. Remove chicken from pan.

  3. Add water to skillet and pour in vegetables to steam them, tossing occasionally, until crisp-tender. (Note: cover the pan if you'd like to expedite the steam process)

  4. Combine heavy cream and Ranch seasoning in a bowl and pour into pan.

  5. Stir skillet contents and bring cream sauce to a boil. Reduce heat to medium-low and allow mixture to simmer for 4 minutes or until thickened slightly.

  6. Add chicken and mix well.

  7. Add rotini to skillet and mix well to combine.
