My name is Erica N. Bethea-Sloan, I am a wife and mother of two kids (ages 9 and 6). I am the owner of Bethea Flower Shop in Bennettsville, SC and I also work with the family business, The Bethea Funeral Home. I have an Associates Degree in Office System Technology from Northeastern Technical College and a Bachelor's Degree in Digital Communication from American Intercontinental University. With our busy schedules, I always want to make sure that we get our greens in with our meals. This salad is very filling because it has your greens, meat, and fruit in one dish. How simple is that? My family and I love it. We know that you will, too. Spinach Salad with Dried Cranberries, Pecans, Strawberries, and Chicken

Ingredients

  • 1 cup of Strawberries
  • 2/3 cup of Pecans (chopped up)
  • Pinch of brown sugar for the pecans
  • Chicken breast (cut up into small bite sized cubes)
  • Choice of dressing
  • 2/3 cup dried cranberries
  • A pinch of salt and ground black pepper
  • 6 cups baby spinach leaves

Directions

Add all salad ingredients, except the chicken, into a large bowl. Place the chicken pieces on top of the salad once you place it in their plates. Pour dressing and toss to evenly coat. Serve immediately.
