Finesse Lyons

I am Finesse Lyons, wife and mother of two teenagers. My daughter Teilexis, is a 17-year-old high school senior this year. My son Kiamari, is a 14-year-old high school freshman. Being the mother of teens, I am always on the go. Whether it’s taking my son to participate in sports and recreation or dropping my daughter off to work or drill practice with AFJROTC, my family's health and well-being are of utmost importance to me so preparing healthy, convenient meals are definitely a must. I hope you enjoy my baked Spinach/Kale-Parmesan Potatoes. 

Spinach/Kale-Parmesan Potatoes

Ingredients

Directions

I like to use whole potatoes, which I peel and slice. You may choose to leave the skin on. Layer them in a pan, season to taste, and oil lightly.  Spread the spinach and kale throughout. Cover with foil and bake for roughly 30 to 35 minutes. Once done, sprinkle parmesan to cover and serve with your choice of meat or serve as the main dish. Bon appetit!
