Like many Moms, I am always looking for quick, healthy, and delicious meals--especially during the school year. When days are filled with work, gymnastics, homework, and everything in between, there is simply not always enough time to cook an amazing home-cooked meal. That’s why one of my go to meals is pasta salad and grilled chicken.
This quick dish is not only tasty, but is made for the health-conscious mom, too. If your children (or husband) are like mine, you can even substitute the bowtie pasta with a hidden veggie pasta. They’ll never know the difference! There are different variations of this recipe, and I recommend trying the different substitutions to find out which version suits your fancy!
Pasta Salad & Grilled Chicken
1 box of pasta (bowtie featured)
1-16 oz bottle of Zesty Italian dressing
3 Roma tomatoes (or substitute with cherry tomatoes)
1 green pepper
1- 2.25 oz can of black olives
2- 5 oz cans of cooked ham (or substitute with 1 pk of turkey pepperoni or sausage)
Directions for pasta salad
Cook pasta according to directions listed on the box.
While the pasta is cooking, wash and cut the tomatoes, green pepper and onion.
Once the pasta is cooked completely, drain them and place them inside of a bowl. Then, mix all of the ingredients into a bowl (diced veggies, canned ham, black olives, and salad dressing). Although this may be eaten warm, it is at its best when chilled.
Directions for chicken
Wash boneless chicken.
Season as desired.
Place on George Foreman grill for 7-8 minutes.*
*If you do not have a grill, you can always opt to cook them in a skillet or baked them.
