Mom's World-Famous Nachos -Trader Joe's Inspired Dish

I do not make this from a recipe, so I'm “guesstimating” on the amount of each ingredient. Because I also want to make this extra simple, extra quick and extra easy, I'm replacing the usual uncooked, unseasoned chicken with an easier, already-seasoned version of chicken. Yes, it's still real chicken. :-) Extra Special Note: This recipe requires you to have a Trader Joe's somewhat nearby.
Preheat oven to 300 degrees.
Line a large baking sheet with aluminum foil.
Spray Trader Joe's Coconut Oil cooking spray over the foil in a thin layer.
Cover the lined baking sheet with your favorite version of Trader Joe's tortilla chips. They have an entire section with just tortilla chips. Look for a low-salt version because all the other ingredients typically have a good amount of saltiness.
In a large skillet, heat 1 package of Trader Joe's Chile Lime Chicken Burgers over medium-high flame. If your pan is truly nonstick, no need to spray with that same coconut oil spray, otherwise spray some of that in your pan before you add the chicken burgers. Cook through, separating the burgers until you have "taco-style" meat.
When the taco meat is cooked through, sprinkle it over the tortilla chips.
Add shredded cheddar cheese.
Bake until the cheese melts into oooey gooey deliciousness, about 10 minutes.
Garnish with your favorite Trader Joe's salsa. We love their Roasted (FRESH) Tomatillo Salsa, but they have tons to pick from, both in the refrigerated section and in the no-refrigerated section.
You could also add black olives and even jalapeños if you like spicy.
If I'm not lazy or tired, I'll whip up a super easy salad with Trader Joe's Wild Arugula or other bag of greens. I dress it with about 1/2 cup Olive Oil, the juice of 1/2 a lemon, a few sprinkles of salt and if I'm really on my game, a finely chopped clove of garlic. I know you are going to love this dish.
